Linda's herb crusted lamb
Ingredients:
4 slices day-old bread, roughly torn
Small bunch each of chives, mint and parsley
1 garlic clove, peeled
2 x racks of lamb, each with 6-7 cutlets, trimmed
2-3 tbsp olive oil
Salt and freshly ground black pepper
Freshly made mint sauce, to serve
Method:
Preheat oven to 220C/Gas 7. Put bread, herbs and garlic in a food processor and blend into crumbs. Add plenty of seasoning and 2-3 tbsp olive oil. Blend until the mixture comes together.
Place lamb in a roasting tray and press the crumb mixture onto the skin-side. Cook for 20 minutes for rare meat, 30 minutes for medium and 40 minutes for well done lamb. Rest for 10 minutes before carving. Serve with mint sauce.
